A Safe, efficient and Practical
Internal Food Safety Audit process to
Make Sure Your Company is Legally Compliant
BEFORE the council pays you a visit!

The Gourmet Guardian have been providing regulatory External Food Safety Audits and Internal Food safety Audits to the companies we assisted in becoming HACCP Certified throughout Australia since 2003.

That's almost 10 YEARS!

Our auditors are currently registered with RABQSA and we have auditors that are approved with the following state regulators:

  • Victorian Department of Health
  • New South Wales Food Authority
  • Queensland Health
  • Tasmanian Department of Health and Human Services

We know and understand the legislative requirements in each state and can assist you with ensuring your business is meeting those requirements easily and efficiently. The last thing your business needs is to end up with a penalty notice or on a "Name and Shame" website.

Be proactive and make sure you are compliant BEFORE the council or inspector comes in.

We can use the audit reports required by your food safety program or prepare a template specific for your needs.

We use the most up to date technology including iPhones and iPads to "capture" any potential food safety hazards in your business. We provide reports that can include:

  • Photos
  • Positive findings
  • Areas where corrective action is required
  • Recommendations
  • Observations
  • Training plans
  • Any other measurements or checks that you require.

Don't be left behind. Your competitors are already seeing the benefits of being proactive. We are already doing these audits for:

  • Hotels
  • Catering Companies
  • Bakeries
  • Resorts
  • Restaurants
  • Fast food outlets
  • Franchises
  • Our own clients we assisted in becoming HACCP Certified including:
    • Importers
    • Bakeries
    • Packaging companies
    • Packaging manufacturers
    • Transport Companies
    • Fruit suppliers
    • Retail meat and fish shops
    • Smallgoods manufacturers
    • Sporting stadiums

We have two styles of audits ... one where we spend days and nights with you, watching, observing and interviewing ... we call this our "Warts and all". Early morning deliveries, how the staff arrive, breakfast buffets, logistics operations, lunch services, dinner functions, overnight cleaning? We see it all.

Alternatively we can complete your regulatory required internal audits.

A Scheduled Full "Warts and All" Audit

This audit is designed for food businesses that want to know exactly what they are doing right, and more importantly, what they are doing wrong! The audit has one of our trained auditors spending one or two full days in your kitchen or production area and the associated food areas within your facility to identify all of the potential issues associated with the way that food is received, stored, prepared, cooked and served within your food business. We will also look at any food safety program and associated records that you may have. We spend time watching what happens, we talk to your staff and we see what they do. Audits are conducted at the times that your facility operates and includes early mornings, evenings and weekends if required.

Following the audit, a detailed report will be prepared identifying all of the good food handling practices as well as potential non-conformances and areas of concern. The report will also contain recommendations for improvement and be accompanied by photos where applicable. The audit summarises the findings that will be discussed with you at the completion of the audit.

Internal Audit And Verification of Compliance Audit

An ongoing review of food handling operations conducted fortnightly, monthly or quarterly (either scheduled or randomly) where we will spend time onsite (including part of the meal service or production where applicable) and review receival, storage, preparation, packaging, and serving of food within your business. We will also look at the food safety program and associated records. This report is finalized during the audit, discussed with appropriate personnel and then emailed to the nominated individuals at the completion of the audit.

This service can include verification activities that are required by your Food Safety Program including:

  • Internal audit
  • Management review
  • Calibration
  • Verification and filing of completed records
  • Refresher or induction training
  • HACCP program reviews
  • Corrective actions
  • Mock recalls
