External Food Safety Audit process to
Make Sure Your Company is Legally Compliant

The Gourmet Guardian have been providing regulatory External Food Safety Audits throughout Australia since 2003.

We are currently registered with RABQSA and approved with the following state regulators:

  • Victorian Department of Health
  • New South Wales Food Authority
  • Queensland Health
  • Tasmanian Department of Health and Human Services

We are approved to conduct regulatory Food Safety Audits of Class 1 and Vulnerable Persons audits including:

  • Hospitals
  • Aged Care Facilities
  • Child Care Centres
  • Meals on Wheels
  • Manufacturers that provide foods to the above sectors
  • Catering companies
  • Bakeries
  • Hotels

The legislative requirements in Australia differ from state to state so it is best that you contact us to discuss your specific needs. Before you call though, be aware that in Victoria, Tasmania and Queensland, you can use any of the approved auditors and you don't need to let the regulator know that you are changing.

In New South Wales however, you must get approval from the NSW Food Authority to transition across from the NSWFA conducting the audit, to an approved Third Party Auditor. You must have achieved an A or B rating in two consecutive audits and also complete the application form and submit the NSWFA. If you do not have approval, you cannot have an approved third party conduct the audit. To make it easy for you, the application form can be downloaded.

At the Gourmet Guardian., we conduct two types of external audit:

  • Regulatory External Audit (against the Food Standards Code and state based requirements), and
  • HACCP Certified Audit

Regulatory Food Safety Audit

Audit requirements and frequency are dependent on individual state legislation

Prior to conducting an External Food Safety Audit, we would we would provide you with an audit plan and Food Safety Audit checklist. The audit checklist helps you with gathering all of the necessary information to make the audit as quick and seemless as possible.

During the audit the following would be reviewed:

  • Storage practices
  • Personal hygiene and cleaning practices
  • Food preparation and service
  • Observation of a meal being served (Breakfast, Lunch or Dinner) or food being manufactured
  • Facilities compliance with Food Standards Australia New Zealand Food Standards Code
  • Food Safety Program's compliance with:
    • FSANZ Food Standards Code (www.foodstandards.gov.au)
    • Individual state Food Act (depending on the state)
    • State specific requirements (i.e. New South Wales Food Authority requirements for Vulnerable Persons – if applicable)
    • It's own documented procedures
    • Monitoring records and other verification activities

An audit plan would be issued prior to the audit, including a copy of our pre audit checklist that will assist you in preparing for your audit. The audit will be conducted as per the terms and conditions for The Gourmet Guardians Food Safety Audit requirements.

The relevant state regulators audit report will be completed on site during the audit. If a printer is available, the audit report will be printed onsite, otherwise the audit report will be printed when returned to the office and posted to nominated contact.

If successful, you will be permitted to use The Gourmet Guardian Food Safety Program Certification Logo (subject to terms and conditions).

HACCP Certification Audit

A HACCP Food Safety Audit would be conducted during production times, where the following would be reviewed:

  • Food preparation
  • Facilities compliance with Food Standards Australia New Zealand Food Standards Code
  • HACCP Program's compliance with:
    • Codex Alimentarius HACCP Guidelines (http://www.codexalimentarius.net)
    • The relevant state Food Act
    • It's own documented procedures
    • Monitoring records and other verification activities

The review will include the observation of the manufacture, preparation and packaging of products. (if applicable)

An audit plan will be issued prior to the audit, including a copy of the audit checklist that will be applied throughout the audit.

The audit will be conducted as per the terms and conditions for The Gourmet Guardians Food Safety Audit requirements that have been attached with this proposal.

If successful, you will be permitted to use The Gourmet Guardian HACCP Certification Logo (subject to terms and conditions)

So what do we do?

During the audit we look at what you are doing now and compare it to the criteria set by the individual state based Food Acts, Regulations and Standards regulating this area. You will gain unbiased expert advice about whether or not you are presently complying with legal standards and you will get simple easy steps to 'close the gap' so that you are 100% legally compliant so that you are 100% legally compliant.

This will mean that you can 'rest easy' and know that you will not be liable to the strict penalties that regulate this area, or even worse, have a food safety incident.

During the Food Safety Audit we will advise your staff of any training options that may be available to them, what is considered best practise, and where applicable, we will draw on our wealth of experience in correct food safety hygiene, and point out if what you aredoing may be done differently, better, faster or easier.

PLEASE NOTE: We cannot consult to you if we conduct your audit as this is illegal in Australia and goes against the RABQSA Code of Conduct all auditors in Australia are meant to comply with. We can however point you in the right direction or give examples on what we have seen, for you to make your own informed decisions.

We are also aware of some companies providing consulting and auditing services where the company that has prepared the Food Safety Program, also conducts the audit. This once again is illegal and a clear conflict of interest. If your council or regulator finds out that you have been audited by the same company as has written your program, they will make you have another audit, even if you have already paid. Often they will make you have the audit within the next seven days.
